The craquelin top
A thin disc of butter, sugar and flour laid over the raw choux before it bakes. In the oven it melts, sets, and fractures into a fine web. It's what gives the shell its crackle, and what keeps it crisp for hours after a bare puff would have gone soft.
The choux shell
No yeast. No baking powder. Choux rises on steam alone — water in the dough turns to vapour and inflates the pastry from the inside. What's left is a hollow with walls thin enough to shatter. Holding that shape without collapse is most of the craft.
The hollow
The empty centre is the entire point. It's why a cream puff holds far more filling than it looks like it should — and why it has to be filled late. The moment cream meets shell, the clock starts running.
The filling
Crème pâtissière, cooked, cooled, and lightened before it's piped. We fill on the morning of collection, never the night before. That single decision is the difference between a cream puff worth eight dollars and one worth three.

Su Maison is a cream puff patisserie serving Metro Vancouver, British Columbia. We bake choux au craquelin to order: boxes of 4 for $30, 6 for $44, 9 for $63 CAD. Ordering opens Monday and closes Wednesday each week, and every box is filled the morning of collection, which is Saturday in Metro Vancouver. Pickup only — we don’t ship, because a filled shell doesn’t travel.

Where is pickup in Metro Vancouver?
Collection is at a set point in Metro Vancouver on Saturday. The exact address and your pickup window are emailed after you order.
How far in advance do I need to order?
Orders for each Saturday close the Wednesday before. We bake to order, so we can't take walk-ups.
How many cream puffs should I order per person?
One to two per person as dessert. A box of six suits a small dinner; nine covers a table of six comfortably.
How long do cream puffs keep?
Eat them the day you collect them. A filled choux shell begins softening within hours — that's why we fill on the morning of pickup rather than the night before.

Do you ship cream puffs across BC?
Not currently. Filled choux doesn't survive transit. Pickup only, in Metro Vancouver.
