There is a particular kind of hosting problem that dessert usually creates rather than solves. You have made everything else. Now there is a cake to cut, and it needs a knife you cannot find, plates you have to wash, and someone willing to stand up and serve while everyone else is sitting down.

Choux pastry solves this by being finished when it arrives.

A cream puff is a complete dessert in a single portion. Nobody cuts it, nobody plates it, nobody serves it. Guests take one from a table and eat it standing up with a conversation still going. For a host, that is the entire difference between dessert as a course you have to run and dessert as a thing that simply happens.

It scales without waste

Order sixty puffs for sixty guests and you will have made sixty portions. A cake requires you to guess at a size, cut it into pieces of uneven generosity, and live with whatever remains going stale on the counter by Sunday. Portioning is built into the format rather than negotiated on the day.

It handles disagreement

Every gathering contains someone who does not like chocolate and someone who does not want anything fruity. Solving that with cake means buying two cakes. Solving it with choux means one box, six flavours, and no discussion. The variety sits inside the order rather than multiplying it.

It looks like something

A tower of cream puffs is dessert and centrepiece in the same object. For events where you were going to spend money on a table arrangement anyway, that is one line item instead of two — and the arrangement gets eaten, which is more than most centrepieces manage.

What it will not do

It will not travel far. Filled choux begins softening within hours, which is why we fill on the morning of collection and why we do not ship. Pickup in Metro Vancouver only.

It will not sit outside in August for four hours. Pastry cream and direct sun are a poor pairing. Shade and a two-hour service window, and you are fine.

And it will not be ready on short notice. We bake to order. Orders close on Wednesday for Saturday collection, and event orders need longer.

We bake to order in Metro Vancouver. Orders close Wednesday for Saturday collection, and everything is filled the morning you collect it. Pickup only — we don’t ship.
